Bonus Delicious --Pretty Beet and Carrots
I am encouraging summer to come back by making cold veggie salads, the kind of thing you want to eat when it's hot and balmy and your skin is sticky. Even though Portland is dim and gray, looking at these plates of goodness makes me feel like I'm getting ready to go to a summer picnic!
